Comfort Food on a Cold January Day


There are some foods that just feel comforting to the soul - and a bowl of hot homemade soup with a slice of made-from-scratch cornbread is one example. I love warm, hearty, and nutrious meals that are easy to make.


This savory bean and ham soup made with country ham packs a lot of protein and fiber into each bite. The slightly sweet cornbread is the perfect touch. Crumble it into your soup, or enjoy it separately with some local honey. No matter what, you’re sure to enjoy this.


Bean & Country Ham Soup:

1 cup chopped country ham, meat removed from bone, but add bone to soup for extra flavor.

2 cans Canellini beans (mash 1 1/2 cup)

4 cups chicken broth

1/2 bag frozen mixed veggies

5 fingerling potatoes, chopped

1 cup cabbage, chopped

1 yellow onion, chopped

1 tbsp butter

1/2 tsp ground sage

2 punches dried thyme

1 tsp crushed red pepper

1/2 tsp chili powder

1 tsp garlic powder

4 white mushrooms, sliced

1 tbsp all-purpose flour

dash of hot sauce

salt and pepper to taste


In a large pot, sautéed onions and ham until onions are translucen. add all other veggies and cook a few minutes. Add chicken broth and all other ingredients except flour. Cool to just boiling. Lower heat and simmer abiut 20 minutes, stirring often. Add flour and simmer another 10 minutes.
